Cauliflower Colcannon with Tiger Bones, the Swan King and Macklemore and Ryan Lewis

As I mentioned here, this dish has the power to infect people and bring them to tears. It is a real horror show or Jesus Camp. The cauliflower colcannon was a combination of a cauliflower mash recipe posted on one of the blogs I have recently started reading, Pride and Vegudice and this recipe.


Cauliflower Colcannon (adapted from Pride and Vegudice)

-2 cauliflower heads, chopped into florets
-2 Tbs. olive oil
-2 Tbs. nutritional yeast
-1/2 tsp. sea salt
-black pepper
-1/4 head green cabbage, sliced thinly

1. Preheat the oven to 350 degrees Fahrenheit.

2. In a wok, heat half tablespoon of olive oil. Add the sliced cabbage. Cook, flipping occasionally, until cabbage is beginning to brown. Put aside.

3. Steam the cauliflower until tender to the touch. Transfer to a food processor and process until smooth. Add the nutritional yeast, sea salt, pepper and one and one half tablespoons of olive oil. Process again until well blended and cauliflower has the desired consistency.

4. Pour the cauliflower into a casserole dish. Add the cabbage and stir until everything is mixed. Place the casserole dish in the oven for 25 or 30 minutes (you want the top to be crusty and golden). Serve!

To accompany the smooth-crunchy texture of the colcannon I've been listening to songs that exemplify that feeling.

Tiger Bones are a Chicago band that combines the shaven element of surf with crackling lo-fi and a dream interrupted. "Kill Them" is what I would want to hear my alarm blare each morning instead of hockey sounds. Tiger Bones has a four song EP coming out on Dedd Fox Records at the beginning of March.

Also from Chicago is The Swan King. These guys combine elements of indie rock with hardcore to create something that is both brutal and mirrorlike. "Staring Through Skulls" is one of the tracks on the bands upcoming Eyes Like Knives album. You can get a copy of the album at their CD release show (February 19th at the Beat Kitchen in Chicago) or purchase it from Seventh Rule when it is released on February 22nd.

The best thing about the Super Bowl every year is that it means baseball season isn't far behind. Hearing Macklemore and Ryan Lewis rap about the Mariners magical season back in 1995 really gets me pumped for spring training (got my tickets to the March 5th Pirates-Phillies game in the mail yesterday).
