Eggplant Dressing modernized by Graft Vs Host, Johnny Uppercut and Weekend

One things for sure, this ain't your Grandmama's Eggplant dressing.


Tradition Bucking Eggplant Dressing

-3 vegan sausages, ground
-3 eggplant, peeled and cubed
-1 onion, chopped
-olive oil
-2 cups brown jasmine rice, cooked
-1 cup breadcrumbs
-salt and pepper to taste

1. Preheat oven to 350 degrees Fahrenheit. Cook the Vegan Sausages according to directions.

2. Place eggplant in cold salt water to prevent discoloration.

3. In a skillet, saute onion in olive oil; add ground sausage. Cook until onion is translucent (about five minutes). Add drained eggplant, salt and pepper. Cook for ten minutes (eggplant should be soft and tender).

4. Add the jasmine rice and stir until mixed. Transfer mixture to 9 x 13 glass baking dish. Cover with bread crumbs and drizzle with more olive oil. Bake for 30 minutes.

  3. And yes it does let you. That is messed up. It depends on how it is cooked up. If it is breaded you could compare it to a lighter healthier version of chicken. If it is mashed it compares to maybe chickpeas and if it is cubed, like in this dish, maybe a softer squash. In the past I didn't like eggplant because of the bitterness but a little salt takes all that away.
